today i am italian!
status: currently biting into oven fresh pizza..*whoops there goes an oregano leaf down the keyboard* while posting this :) ahhh cheesy goodness with crispy crust.
don't you have this thing against thick bready pizza bases. it totally spoils the pizza experience. too overwhelming for me.
I generally prefer thin crusts or stuffed crusts. thin because it's really crispy- seriously if you haven't tried the thin ones you're really missing out. stuffed crust because--- of the cheese :) so elastic.
anyway. made pizza today.
really simple.
you can make the dough and store it in the fridge to keep for another day.
and sorry bout sidetracking so much but I have to say i totally adore the smell of ethanol released by yeast when you make the dough... ahhh :)
basic thin crust pizza dough recipe
(obviously, you roll it out thinly, around 1 cm thin)
1.one teaspoon dry yeast, activated in
3/4 cup lukewarm water + teaspoon sugar for 20 minutes
2.FLOURRRRRRR 250g and extra for dusting
mix until consistency is sticky- not too wet, not too dry
keep in a bowl, cover with wet cloth and leave it to rise for 1 hour+ (keep watch)
toppings are up to ya :)
oven should be 220 degrees celcius. bake for 20 mins. don't take it out too early though it's not gonna be crispy. wait till it's goldenish :)

Chocolate marshmallow cookies
Can anyone just ever get enough of cookie dough :)
Those were kinda yummy but I made it too sweet. Should have gone easy with the sugar on the cookie dough as the marshmallows+icing was already sweet.
Basic recipe (i don't believe in exact portions, just add as you feel is right)
- 4 tbsp butter at room temperature
- 40 g granulated sugar
- 30 g brown sugar (optional, otherwise replace with white sugar)
- 1 big egg
- a few dashes of milk ( i suppose full cream would be best but i used low fat haha)
- 3 tbsp cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Marshmallows, snipped into half
- Enough flour to make the batter gooey yet not too dry
- Vanilla essence
cream butter with sugar, add egg, vanilla essence, cream again.
sieve flour, soda, salt & cocoa powder together, mix with above butter+sugar. add flour/milk as necessary.
spoon the dough with a tablespoon onto greased pan (leave space for it to rise)
oven at 170 celcius, bake 5-10 mins, take out, press marshmallow on, put it in again for 3 mins or until the marshmallow has puffed up. don't wait too long though, cause it might just melt off. very ugly, trust me.
if you feel the need to ice it then do.
